Senior Post-Doctoral Researcher, School of Food and Nutritional Sciences and APC Microbiome Ireland

17 Month, Fixed-term, Whole-time Post Position summary This senior postdoctoral researcher position in the Food Ingredients Research Group at UCC is being sought as part of a strategic collaborative research project with an industry partner focused on developing an enhanced understanding of the complex relationships between macro- and micro-nutrient chemical composition and techno-functional properties of lecithin ingredients. Lecithin ingredients are complex mixtures of phospholipids and are widely used in the formulation of food systems to enhance their technological functionality, application range and stability but have not been as well studied as other food ingredients/constituents. Much potential exists for the successful candidate to develop fundamental and applied understanding of the complex relationships between origin, composition and functionality of lecithin ingredients. The Food Ingredients Research group is one of the largest research groups in the School of Food and Nutritional Sciences at UCC. The group was established approx. 9 years ago and is led by Dr Seamus O’Mahony who is a Lecturer in Food Science at the University. The group typically consists of 10-12 MSc and PhD students, research assistants and postdoctoral researchers and is funded from a wide range of public and industry sources; Dr O’Mahony has attracted >€7m in competitively-won research funding, published >110 scientific papers and trained >60 postgraduate students and research staff. This project was developed and will be delivered in collaboration with the APC Microbiome Institute which was formed in 2003 with funding from Science Foundation Ireland and in conjunction with key industry partners. It represents a seamless collaboration between UCC, Teagasc and CIT. It is widely recognised that the gut microbiota plays an important role in human health and has become one of the most dynamic, complex and exciting areas of research in both food and pharmaceutical arenas. Over the last decade the APC Microbiome Institute has established itself as one of the leading global centres in gut microbiota research. The APC Microbiome Institute has made several landmark discoveries and has published over 1300 research articles in peer-reviewed journals, generating many journal covers and associated editorials. The APC Microbiome Institute collaborates with over 20 industry partners and employs over 300 individuals, from the scientific PI’s funded by the partner Institutions, the management team, and a dedicated group of research scientists, research assistants and postgraduate students.
